Requirements:
Ingredients:
- ¼ head medium-sized cauliflower
- ¾ cups wheat flour, and more as needed to bind the dough
- ¼ cup cilantro leaves
- Sea salt to taste
- Green chilies (sliced or crushed) to taste
- Grapeseed oil, as needed
Instructions:
- Chop the cauliflower into florets and then process in a food processor.
- Mix the rest of the ingredients (except for the oil) into the cauliflower and lightly knead for 1 minute. The texture should be soft and sticky but solid.
- Split the dough into twelfths. Roll each into a ball and lightly flatten. Cover each ball in flour so they don’t stick to the rolling surface.
- Very lightly roll out each ball into a flat circle. Be careful because the dough is very delicate. If it rips, roll back into a ball and start over.
- Oil a pan and cook each paratha on the pan for 1-2 minutes.
